Easy Homemade Vegetable Broth Recipe

medium yellow onions (2 lbs)

28-oz can whole peeled plum tomatoes, drained

medium carrots (12 oz), scrubbed and cut into

3/4-inch pieces

large parsnip (6 oz), scrubbed and cut into

3/4-inch pieces

Kosher salt

medium stalks celery (11 oz), very dark leaves trimmed, chopped into 3/4-inch pieces

red bell pepper, seeded and chopped into 3/4-inch pieces

heads garlic, halved horizontally

black peppercorns

fennel seeds

apple cider vinegar

dried shiitakes (about 1 cup)

bay leaves

Stems from 1 bunch parsley

nutritional yeast

5-inch piece kombu
